- There are two ways; your obviously looking for the one with water in the air which is in fact incorrect; it is due to transpiration of the plants during the night and their excess water from cellular respiration and photosynthesis. Using your words however: The water starts out as water vapor, which is water in its gaseous form, this is during the day in the heat and sun. At night when the sun goes down the water vapor loses energy and undergoes a 'phase change' from gas to liquid. The liquid then settles on the lawn and is henceforth known as dew. This process of going from gas to liquid is known as condensation and its result in also know as condensation.
