How do you get grass seeds from the stalk?

I need some grass seeds, for a project. And I mean YARD grass.

1. You let the lawn grow tall, make seed stalks, and when the seeds ripen, you can cut the stalks, and shake the seeds into a bag.
2. Hi! Just take a walk with a paper bag and pair of scissors. Look for an unmowed lawn or lot you will definitely see seed stalks this time of year. Clip a few and Voilla! your project is off and running. Too bad you don't live down the street from me-I have to mow.
